Coffee Fudgesicles and Popsicles

The temperature is supposed to keep getting hotter and hotter this week so what better way to beat the heat than a cool, creamy fudgesicle. Homemade with gourmet coffee as an ingredient of course!

Here are # coffee fudgesicle recipes I’ve found that

Mexican Chocolate Fudgesicles

Made with plenty of real dark chocolate, cinnamon, vanilla and cocoa power these Mexican inspired frozen treats don’t actually have coffee as an ingredient but I am sure if you add some instant coffee into the vanilla extract or exchange a shot of espresso for some of the milk you will come out with a great caffeinated version of this fudgesicle.

Mocha Fudgesicles

This recipe posted by Planet Byn but originally from the New Frontiers in Baking cookbook is a little more involved. Many of the ingredients you would expect to use in a cake or cookies. In the end the butter, sugar, cocoa power, espresso, flour and cornstarch plus the egg, whipping cream and whole milk all come together in a creamy, fudgey frozen bar.

I’ll admit, this list of recipes had me drooling! This recipe conglomeration features 6 delicious variations including:

  • Chocolate and Salted Caramel Pudding Pops
  • Hot Chocolate Popsicles
  • Fudgesicle Bars with Caramel and Spanish Peanuts

Iced Coffee Popsicle

And to finish this blog post up here is a recipe that gets back to the basics. Just fresh brewed coffee, half and half and sugar. Simply mix together, pour into your popsicle molds and let freeze until solid (if you have enough patience to wait that long).

What’s your favorite summertime coffee treat? Do you prefer to keep drinking hot brewed coffee or do you switch it up to something cooler and more refreshing when the heat comes?
